Tabitha Brown is back to make your day again. This time with a “good morning!” paired with a contagious laugh and a delicious recipe perfect for any time of day: “Fancy Avocado Toast.”

“Now Tab, ain’t avocado toast already fancy?” Brown thought you might ask that—but this one is topped with maple-dipped mushrooms.

Grab your white mushrooms, place them in a bowl, and drizzle maple syrup on top. “I don’t know how much honey, just until your spirit tells you to stop,” Brown says, proceeding to add a few dashes of liquid aminos and garlic & herb powder on top. Then, it’s time to sautée them for 5 minutes on each side, or until the edges begin to brown.

Brown advises placing the avocado, whether mashed or sliced, on the bread when it’s hot—fresh out of the toaster. Then add your tomato slices, mushrooms, and sprinkles of parmesan and cilantro. And, if you’d like, “because it’s your business,” you can add a little bit of garlic & herb powder on top.

With a prayer and a quick tune, Brown enjoys a mouth-watering taste test. “If you start your day off with this, or eat it for a midday snack, or lunch, or dinner... things are just gonna go right,” she notes.

“Well, honey, that’s that. I’ve shown y’all how to make it,” Brown says, before reminding us all that a little meal-time dance doesn’t hurt either.

Maple Mushroom Avocado Toast by Tabitha Brown

Ingredients:

White mushrooms

Cilantro

Tomato

Avocado

Maple syrup

Coconut aminos

Garlic & herb powder

Bread

Lemon Pepper parmesan

Recipe:

White mushroom halves

Slice tomato

Chop cilantro

Season the white mushroom halves in a bowl with maple syrup, liquid aminos, garlic & herb powder, making sure they’re evenly coated.

Sautée the mushrooms for 5 minutes on each side, or until edges begin to brown

Toast the bread

Add avocado (sliced or mashed) to the toasted bread

Add slices of tomato on top of avocado

Add sautéed mushroom on top of tomato

Finish off with the lemon-pepper parmesan and cilantro

If you’d like, add garlic & herb powder on top
